At the beginning of each week I usually sit down, figure out what we're going to eat for the week, then go grocery shopping and call it good. I don't always go through the menu with Adam to make sure it all sounds good, and every once in a blue moon there ends up being a meal that he doesn't want.
About halfway through the week, I tell the hubby we're having Feta Chicken for dinner. I get an alarmed look, quickly followed by a "no". Apparently I had forgotten that last time this meal came around, he had gotten sick after dinner (it was cold/flu-like stuff, definitely not related to the meal). But it didn't matter -- he was still scared to eat it.
So what was I to do with the special scallopini-style chicken I had bought? I couldn't let it go to waste. Well, what better than super fast and easy (as we all know I love) panko-coated chicken strips.
Panko-Coated Chicken Strips
From: Original Recipe
2 Tbsp. Olive Oil
1 pkg. scallopini-style chicken
1 egg, lightly beaten
About 3 oz. panko bread crumbs
Italian seasoning, to taste
Heat oil in large frying pan over medium heat.
Lightly beat egg in a small bowl. Add italian seasoning and panko to another small bowl and mix well. Dip each strip of chicken in the egg, then roll in panko. Cook in pan about 4-5 minutes on each side, or until done.
